Ingredients:

For the Dough:

  • 2 cups whole wheat flour (atta)
  • 1/2 teaspoon salt
  • Water (as needed for kneading)
  • Ghee or oil (for cooking the parathas)

For the Paneer Filling:

  • 1 cup grated paneer
  • 1-2 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds (jeera)
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder (optional)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon dried fenugreek leaves (kasuri methi)
  • Salt to taste
  • Fresh coriander leaves, chopped

Instructions:

1. Prepare the Dough:

  • In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a smooth and soft dough. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

2. Prepare the Paneer Filling:

  • In a bowl, mix the grated paneer, chopped green chilies, cumin seeds, garam masala, red chili powder, turmeric powder, kasuri methi, and salt. Add chopped coriander leaves and mix well. Ensure the mixture is well combined and adjust the seasoning if needed.

3. Assemble the Parathas:

  • Divide the dough into equal-sized balls. Take one ball, flatten it slightly, and roll it out into a small circle (about 4-5 inches in diameter).
  • Place 2-3 tablespoons of the paneer filling in the center of the rolled dough. Bring the edges together to seal the filling inside and form a ball.
  • Gently flatten the stuffed dough ball and roll it out into a larger circle (about 6-7 inches in diameter). Be careful not to let the filling spill out.

4. Cook the Parathas:

  • Heat a tawa or flat griddle over medium heat. Once hot, place the rolled paratha on the tawa.
  • Cook the paratha until bubbles start to form on the surface, then flip it over. Apply ghee or oil on the cooked side and flip again to cook the other side. Repeat this until both sides are golden brown and fully cooked.
  • Repeat the process with the remaining dough and filling.
